Novel Protein Products are a new range of finished products made with fibrated proteins. developed from HMEC (High Moisture Extrusion Cooking) by Clextral in partnership with food research centres. Wet extruded fibrous proteins are processed vegetable proteins well balanced in nutrients. They are directly extracted from plants such as soya, cereals, or pulse (peas and beans) or other plants. They can integrate fish or meat-based raw materials. Also used as ingredients for vegetarian or vegan dishes (meat substitutes or meat analogs) or prepared for ready-to-eat meals. The demand for these products is growing as consumers seek healthy and tasty alternatives to meat.
