Frédéric Baudouin is in charge of analytical and application lab at IMPROVE, a leading R&D centre dedicated on the valorisation of alternative proteins. He has a PhD in Food science and has 15 years of experience in the protein sector, working for companies (Tereos, Nestlé, IMPROVE) and research centre (INRAe, Teagasc) on proteins from milk, cereals, pulses, insects, single-cells organisms and precision fermentation. He regularly provides training, consulting and webinars for professionals and participates to various initiatives for the structuration of the alternative protein sector.
