Panos is a chemist by training, with an MSc in applied molecular spectroscopy and a PhD in structure, dynamics, and mechanical strength of polymers and particle-based nanocomposites. After his studies, he joined the Soft Materials group at TU Eindhoven and was involved in the study of the mechanics of individual soft particles using conventional and microfluidic techniques and their relation to their macroscopic viscoelastic properties (e.g. rheology). In 2013 he moved to the Food Discovery Genesis Structurants group at Unilever R&D Vlaardingen and worked on techno-functional properties of proteins (mainly water-insoluble) for the generation and evaluation of new technologies for the improvement and development of current and new food applications. Over the last 7 years, he has worked as a researcher and project leader at the Protein Technology group of Wageningen Food & Biobased Research with a main focus on the techno-functional properties of the vast variety of non-traditional proteins and their contribution to the overall performance of finished products.
