Jonathan Blutinger, Ph.D., is a food engineer with a passion and dedication to revolutionizing the culinary landscape through novel digital cooking techniques. During his academic journey, Jonathan led a team at Columbia University’s Creative Machines Lab, to develop a fully integrated digital cooking platform that can 3D print and laser cook software-generated food recipes. After completing his Ph.D., he worked as a postdoctoral fellow on a project funded by Redefine Meat, developing robotic frameworks to scan real and fake meat textures for more precise plant-based meat replication. He is currently working with the U.S. Army’s Combat Feeding Division. His team is tasked with optimizing untethered food logistics to healthily feed soldiers in the field.
