We are thrilled to have Symrise back at Bridge2Food Europe! What are you most looking forward to about the event?
Thanks, same for us. Bridge2Food Europe is always a great place for us to stay up-to-date about plant-based alternatives. It’s always interesting to see what’s going on in the market or with new product developments and latest innovations.
We are also looking forward to meeting our customers or having discussions with new people to network and exchange ideas. Another highlight is the different presentations and panel discussions, which are very inspiring and insightful from our point of view. As you see, there are a lot of things we are looking forward to when it comes to the event.
What is an example of a new technology trend that is being used to drive ingredient development?
It's not only about new technologies, it is great to see how old technologies are utilised in ways that we have never thought about before. As example we can look fermentation, how this ancient technique is used to create the most advanced proteins. But of course, also how we continuously keep innovating in agronomy, to make our crops more resilient.
How we can combine these traditional technologies with new tech like using big data in combination with AI to basically take massive shortcuts in development time, is what we think is the actual trend. Reducing development time from years to basically weeks.
How is Symrise innovating its alternative dairy products?
That’s for sure our own tools: Protiscan™ and Symager™. These enable us to analyse off-notes, identify pain points, and provide best-in-class solutions. Additionally it enables us to learn how flavours perform in alternative bases and leverage this knowledge into our concepts for plant-based alternatives.
Moreover the collaboration with ecosystems helps when it comes to innovation. Having a broader view and inspiring people around is crucial when it comes to innovation – that’s our philosophy.
In the coming years, what technology do you think will be a game-changer for the alternative protein market?
Fermentation will be the game-changer. Being able to not only produce very specific proteins, but also being able to produce them "on demand", will be a key driver to fulfil the global demand for protein. Its scalability will provide cost reductions in the long term and it will support a more sustainable future when we think about food security, even for the demographics that would suffer the most from it. From a technological aspect, it will allow us to create products that are closer to their animal counterparts, which will be needed to win over the mass market of consumers who still prefer to consume animal-based proteins due to their taste and nutritional preferences.
What can attendees expect to learn about during your presentation?
They will learn more about our analytical approach to fast-track product development. However, I do not want to say too much—just come and listen. I highly recommend joining us.
