Within my department Food, Health & Consumer Research we focus on nutritional quality & health and I am the contact person for collaborations in the following areas: In vitro food digestion models; In vitro cellular absorption/translocation models; Influence of food intake on gut health, including risks for allergy sensitization; Food intake perception on receptor level at oral, gastric and intestinal level.

Presentation Description

The protein bio-accessibility of mycoprotein products is determined by the degree of digestion in the gastrointestinal tract. Undigested mycoprotein leaving the small intestine can then be utilized by the microbiota in the large intestine.
